Thanksgiving Baking



Pumpkin Doughnut Muffins
(Yield 12 muffins)
Batter:
10 tbsp unsalted butter
3 cups all-purpose flour
2 1/2 tsp baking powder
1/4 tsp baking soda
1 tsp coarse salt
1/2 tsp ground nutmeg
1/4 tsp ground allspice
1/3 cup buttermilk
1 1/4 cups pure pumpkin purée
3/4 cup light brown sugar
2 large eggs
Sugar Coating
3/4 cup granulated sugar
1/4 unsalted butter (melted)
Directions:
- Mix together the flour, baking soda, baking powder, salt, nutmeg and allspice.
- In a small bowl, whisk together buttermilk and pumpkin purée.
- Beat in eggs, one at a time. Next, add flour mixture, alternating with pumpkin mixture.
- Spoon 1/3 cup batter into each muffin cup.
- In a medium bowl, combine granulated sugar and cinnamon.
- Remove muffins from pan, brush all over butter, then toss to coat in sugar mixture.
Mini Pumpkin Pie Bites
(Yield 24 pies)
Ingredients:
2 refridgerated ready-to-roll pie crusts
8 oz. cream cheese at room temperature
1/2 cup sugar
1 cup canned pumpkin
3 eggs
1 tsp vanilla
1 tsp pumpkin pie spice
pumpkin-shaped cookie cutter
Directions:
- Preheat oven to 350 degrees.
- Use cookie cutter to cut 12 pumpkin shakes from each pie crust.
- Press dough shapes into a 24 cup mini muffin tray, apply egg whites from one egg to the top edges of each pie.
- Mix cream cheese, sugar, canned pumpkin, 2 eggs, vanilla and pumpkin pie spice together until thoroughly combined.
- Spoon mixture into each pumpkin-shaped pie crust.
- Bake for 10-12 minutes.
Chocolate Chip Pumpkin Bread
(Yield 2 loaves)
Ingredients:
3 cups all-purpose flour
2 tsp ground cinnamon
1 tsp salt
1 tsp baking soda
4 eggs
2 cups sugar
2 cups canned pumpkin
1 1/2 cups canola oil
1 1/2 cups semisweet chocolate chips
Directions:
- In a large bowl, combine the flour, cinnamon, salt and baking soda.
- In another bowl, beat the eggs, sugar, pumpkin and oil. Stir into dry ingredients just until moistened. Fold in chocolate chips.
- Now slowly mix flour mixture into pumpkin mixture.
- Pour into two greased 8x4 inch loaf pans. Bake at 350 degrees for 60 to 70 minutes or until a toothpick inserted near the center comes out clean.
