Thanksgiving Baking

Pumpkin Doughnut Muffins

(Yield 12 muffins)

Batter:

10 tbsp unsalted butter

3 cups all-purpose flour

2 1/2 tsp baking powder

1/4 tsp baking soda

1 tsp coarse salt

1/2 tsp ground nutmeg

1/4 tsp ground allspice

1/3 cup buttermilk

1 1/4 cups pure pumpkin purée

3/4 cup light brown sugar

2 large eggs

Sugar Coating

3/4 cup granulated sugar

1/4 unsalted butter (melted)

Directions:

  1. Mix together the flour, baking soda, baking powder, salt, nutmeg and allspice.
  2. In a small bowl, whisk together buttermilk and pumpkin purée.
  3. Beat in eggs, one at a time. Next, add flour mixture, alternating with pumpkin mixture.
  4. Spoon 1/3 cup batter into each muffin cup.
  5. In a medium bowl, combine granulated sugar and cinnamon.
  6. Remove muffins from pan, brush all over butter, then toss to coat in sugar mixture. 

 

Mini Pumpkin Pie Bites

(Yield 24 pies)

Ingredients:

2 refridgerated ready-to-roll pie crusts

8 oz. cream cheese at room temperature

1/2 cup sugar

1 cup canned pumpkin

3 eggs

1 tsp vanilla

1 tsp pumpkin pie spice

pumpkin-shaped cookie cutter

 

Directions:

  1. Preheat oven to 350 degrees​.
  2. Use cookie cutter to cut 12 pumpkin shakes from each pie crust.
  3. Press dough shapes into a 24 cup mini muffin tray, apply egg whites from one egg to the top edges of each pie.
  4. Mix cream cheese, sugar, canned pumpkin, 2 eggs, vanilla and pumpkin pie spice together until thoroughly combined.
  5. Spoon mixture into each pumpkin-shaped pie crust.
  6. Bake for 10-12 minutes.

 

Chocolate Chip Pumpkin Bread

(Yield 2 loaves)

Ingredients:

3 cups all-purpose flour

2 tsp ground cinnamon

1 tsp salt

1 tsp baking soda

4 eggs

2 cups sugar

2 cups canned pumpkin

1 1/2 cups canola oil

1 1/2 cups semisweet chocolate chips

Directions:

  1. In a large bowl, combine the flour, cinnamon, salt and baking soda.
  2. In another bowl, beat the eggs, sugar, pumpkin and oil. Stir into dry ingredients just until moistened. Fold in chocolate chips.
  3. Now slowly mix flour mixture into pumpkin mixture.
  4. Pour into two greased 8x4 inch loaf pans. Bake at 350 degrees for 60 to 70 minutes or until a toothpick inserted near the center comes out clean.
